About the Recipe
Add more olive oil is you want to drizzle this over salad or salmon steaks
Ingredients
50g pine nuts
50g basil
50g Parmesan
2 garlic cloves, peeled
150ml olive oil
a pinch of salt
Preparation
Lightly toast the pine nuts in a dry pan (about 2 minutes on each side). Do watch them as they burn very easily.
Break the Parmesan into chunks into the bowl of a food processor and whizz for a couple of minutes.
Add the garlic, basil, olive oil and a pinch of salt and whizz until smooth.
This will store in the fridge with a layer of olive oil on it for about 1 week.
