About the Recipe
This is chicken soup for the soul as well as the stomach! If you're feeling under the weather and need some comfort food then look no further than this delicious and healthy chicken soup recipe.
This freezes and is something I like to always have in our freezer.
Ingredients
1kg chicken thighs or wings with bones in
2 onions chopped
3 celery sticks chopped
2 leeks chopped
6 medium carrots chopped
1 tbsp mixed herbs
2 litres weak chicken stock
1 tbsp cider vinegar
25g butter & glug of olive oil
Preparation
Step 1
Gently saute the onions, leeks, celery and half the carrots in butter and olive oil for 5 - 10 minutes until softened but not browned.
Step 2
Add the chicken, herbs, vinegar and stock and bring to a gentle simmer. Simmer for 45 minutes, until the chicken is cooked thoroughly.
Step 3
Take out the chicken and set aside to cool. While the chicken is cooling use a stick blender to blend the soup. Then add the carrots and cook for 15 minutes until the carrots are soft. Strip the chicken from the bones and add back to the soup when the carrots are cooked.
Step 4
Serve with crusty bread.
