Potato Salad

About the Recipe

I love the combination of mustard and mayonnaise so the dressing gives a sweet and sour taste which isn't too rich.


  • 400g small new potatoes

  • 2 tbsp wholegrain mustard

  • 2 tbsp mayonnaise

  • 1 tsp castor sugar

  • 2 tbsp light chicken stock

  • 3 or 4 spring onions, finely sliced


Step 1

Boil the potatoes until cooked (soft but not squashy), typically about 20 minutes.

Step 2

If the potatoes aren’t bite size then cut them into cubes while still warm.

Step 3

Mix the mustard, mayonnaise and sugar with the chicken stock to make a dressing. Season with salt and pepper to taste.

Step 4

Toss the potatoes in the dressing until evenly coated. Sprinkle the spring onions over the top and serve.
